How to make it

  1. Season the salmon with salt and pepper
  2. Set a pan to high heat and once hot spray with olive oil
  3. Add the salmon to the pan and cook for no more than 2 minutes then remove from the heat
  4. Chop the onion and red pepper into small pieces
  5. Set a pan to high heat and once hot add olive oil
  6. Add the onion, garlic, ginger and lime zest, mix it all together with the oil and cook for ~2 minutes
  7. Add the red pepper and sugar snap peas and cook for ~3 minutes
  8. Add the coconut milk, vegetable stock, turmeric and curry paste, mix it all together and reduce to low-medium heat and leave to simmer for ~3 minutes
  9. After ~3 minutes add in the salmon and cook for ~8 minutes and remove from the heat
